Fruit & Juice

The mayhaw industry of both the past and present has been represented by an assemblage of vertically-integrated operators who propagate their own plant material, produce their own fruit, sell whole frozen fruit, process juice, manufacture, market and retail jelly and syrup, and offer advice to those interested in the production or consumption this culturally rich indigenous fruit.

 
 
  • It is our goal to bring the great flavor and story of the mayhaw to a commercial audience in a way the maintains the quality standards and legacy of those who pioneered the production of this fruit from the swamp to the orchard. Fruit will be available for the wholesale market in 2023. Wholesale Evaporated Juice is expected to be available for food and beverage manufacturers beginning in 2026.

  • As we develop best practices for the production of single strength mayhaw juice, as well as specific standards for pH and Brix content, we have begun trials on the production of an evaporated juice product for wholesale to food and beverage manufacturers. The juice is analyzed for its composition and how the sugar content, acidity and other organoleptic qualities vary when it is processed in different ways. Additional processes will allow better preservation of the valuable mayhaw juice as a concentrate, lengthen the shelf life, minimize packing, facilitate transportation, and make handling of the juice easier for downstream processing.
